This quick and easy microwave roast peanuts recipe is for a snack that anyone can prepare. This takes advantage of using a microwave oven instead of a conventional oven or a cook-top pan to roast your peanuts in a much shorter time and with stunning results.

  1. Thoroughly mix the salt and water to create a salty brine.

  2. Soak the peanuts in the salty brine for about 20 minutes long enough for the flavor to penetrate the nuts.

    The skin should be be wrinkly and soaked to know when ready
  3. Pour out the brine and place the peanuts in a microwave safe dish.

  4. Place the peanuts in the microwave and cook on high for 1½ to 2 minutes.

    Depending on the power of you microwave you should adjust the time. This recipe has been tested at 1½ minutes on 1200 watt microwave
  5. Remove the peanuts from the microwave and stir them gently and carefully.

  6. Return the peanuts into the microwave and cook on high for an additional 1½ to 2 minutes.

  7. Once done, remove the dish from the microwave, spread the peanuts on a tray or platter and let them cool down a bit.

    At this point the peanuts may feel slightly undone. This is normal as the nuts will continue to cook a little bit after removing from the microwave.
  8. Serve once the peanuts have cooled down

    If you need to store the peanuts, let them cool down to room temperature then store in an airtight container.
