Tomato sauce also known as Neapolitan sauce or Napoletana sauce in Italy is one of the five mother sauces of French cuisine as described by Auguste Escoffier<\/a>. It also refers to any variation of sauces based primarily on tomatoes.<\/p>\n\n\n\n

The other four sauces include\u00a0Espagnole Sauce<\/a>,\u00a0B\u00e8chamel sauce<\/a>, Bearnaise sauce, and\u00a0Velout\u00e8 sauce<\/a>.<\/p>\n\n\n\n

Tomato sauce comes in many forms and textures. They can be homemade or can be processed commercially as a condiment also known as ketchup or just tomato sauce. In this article, we feature the sauce intended for use as part of a dish rather than the condiment varieties.<\/p>\n\n\n\n

These sauces are very commonly used in pasta dishes,\u00a0pizza<\/a>, and meat dishes above all other dishes. Tomato sauce is unique in that rather than use a roux as a thickening agent, the tomato itself is used to thicken the sauce<\/a>.<\/p>\n\n\n\n

Tomato sauces are usually seasoned with salt and pepper in addition to an assortment of\u00a0herbs\u00a0and\u00a0spices.\u00a0Onion<\/a>\u00a0and\u00a0garlic<\/a>\u00a0are popularly added to tomato sauce to bring out their best.\u00a0Herbs<\/a>\u00a0such as\u00a0Basil<\/a>,\u00a0Oregano<\/a>,\u00a0Marjoram<\/a>,\u00a0Thyme<\/a>, and\u00a0Parsley<\/a>\u00a0marry well with this sauce.\u00a0Cilantro,\u00a0Cumin,\u00a0Cloves,\u00a0Turmeric, and other spices are also used to flavor derivatives of this sauce.<\/p>\n\n\n\n

Other\u00a0vegetables\u00a0such as\u00a0bell peppers,\u00a0celery<\/a>,\u00a0and carrots<\/a>\u00a0also go well with this sauce.\u00a0Stock\u00a0and wine or water are frequently added to keep the desired moisture content.<\/p>\n\n\n\n

The simplest form of this sauce simply involves seasoning tomatoes and then cooking with olive oil.<\/p>\n\n\n\n

On the other hand, sauce tomate as it is known when referring to one of the five mother sauces in classical French cuisine consists of a roux of butter and flour with either tomato pur\u00e9e or fresh tomatoes.
